SPRING VALLEY—When Emily Faber decided she’d run her own restaurant, she wanted it to feel like home for her customers.

So what better place for Spring Valley Cardinal fans to flock together when they dine out than “The Nest”? That’s the name Faber has selected for her eatery in the village’s downtown, previously known at various times as Deb’s Country Inn and Kermit’s Kafe.

“We’ve introduced a different décor to make it more homey,” Faber said Thursday, noting painting, cleaning floors and the like were accomplished inside the premises which had been closed until she reopened it late last month.

Last week—her first in operation—she found the town to be “accepting” and “wonderful,” she said. In fact, the response has been almost overwhelming; so much so, the owner and her crew of employees, including a lot of family and friends, were kept constantly busy.

Faber said she and her fiancé, Mike Ealey (now a welder at Thomas and Betts Corporation in Hager City), really hadn’t planned on getting into the food service industry at this time, despite her extensive experience at The Kyote’s Den, toward Menomonie on Hwy. 29. She’d been employed there off and on for nearly 10 years while still in school; the last year-and-a-half, she served as the second main cook, learning about ordering and running the kitchen.

“We joked about maybe doing it in retirement,” she said of restaurant plans that got moved up when nothing in her chosen field of work materialized.

After graduation from Spring Valley High School in 1999, where she enjoyed volleyball, band, choir and cheerleading for the wrestling team, the UW-La Crosse student expected to become a teacher, studying high school history, she said. Two years later, she switched to UW-Stout for guidance counseling. She gained a Master’s degree in that subject in 2008.

Then, Faber and Ealey moved to Southern Indiana, where she was an at-risk counselor for four years, she said. Unfortunately, it was a grant-funded position and the grant expired. Because both have family back here, they relocated to Ellsworth a year-and-a-half ago.
