Sailer's brings home top honor from national convention
ELMWOOD--Another year, another successful round of results for Sailer’s Food Market and Meat Processing, Inc., at the American Association of Meat Processors National Convention in Milwaukee.
The Elmwood processor earned 11 awards, including the biggest one--the Cured Meats Excellence Award, the processor whose products ranked the best overall in the competition. It’s the second time in the last three years Sailer’s has won the coveted award.
“This is a big deal for us,” said Sailer’s owner Jake Sailer. “We are tickled to win the award…It puts little Elmwood, Wisconsin, on the map.”
He explained a point system is used to determine the Excellence Award. The more Grand Champion and Reserve Grand Champions a processor wins, the more points they earn toward the Excellence Award. This year, Sailer’s had five grand champion and reserve grand champion place finishers. There were 823 entries in 27 product categories.
Included on that list was a first place, grand champion in the heavyweight bacon and traditional boneless ham, and second place finishes for frankfurters, bone-in ham, restructured jerky. Entries were judged on the basis of aroma, flavor, eye appear, color and texture.
Sailer called the three-day event a lot of fun, as Sailer’s also learned and helped other meat processors around the country.
“It’s like a small family that meets once a year,” Jake said. “It was amazing.”
