Old Cowbelle: Waiting for Spring

I haven't really minded the winter because I could be indoors most of the time, but I have to admit, it is getting a little old! So I dug out an old poem to try and imagine how it will be to see and smell the new season of spring.


There's something soft about the air,

when April breezes blow!

A clean, refreshing breath of spring,

that follows cold and snow!

The pungent smell of thawing earth,

the subtle hint of blooms,

from apple, plum and lilac trees

escaping winter's wombs.

The very slowly turning green,

of trees and fields and lanes,

reveal the miracle of growth,

responding to April's rains.

The sweet emergence from that grave,

of winter, dark and cold;

when rippling streams and bursting buds,

brand new lives unfold!

These earthly things their stories tell,

of new life out of death

as Jesus died, then rose again,

to give Eternal breath!

Since the first of February, when I began testing my glucose, I found that it really does make a difference by cutting out most of the sugar and cutting down on carbs. The first reading was 127, which isn't terrible, but is way higher than is sensible.

By eliminating the sugar (as much as possible, since there is some sugar in almost everything on the grocery shelves), I lowered my glucose reading to 103! (I know, ideally it should be under 100, but it is a beginning.) It hasn't even been too painful, once I got my head around it. Easter Sunday proved to be a challenge and I did have some dessert.

And speaking of dessert, I ran across an old Cow column that was stuck in a cook book. It was from 2000 and the photo showed me with those huge glasses that covered almost half of my face.

The column included a brownie recipe that I had forgotten about. I hadn't expected it to be any good because it is so simple, but it is. It stays moist and the chocolate chips stay soft. Just for fun I will share it. (But I am not going to make them for myself.)


1 box (small) instant chocolate pudding mix.

Mix with 2 cups milk.

Whisk in one package of chocolate cake mix, (no eggs, water, or oil).

Stir in 1 12-ounce package of semi-sweet chocolate chips.

Bake in 9 x 13 pan for 30 minutes at 350 degrees.

Try them, they really are good.

(And no calories or sugar!) Just kidding.
